A healthy tropical breakfast bake loaded with mango, pineapple, coconut, and white chocolate, and cooked to perfection! You won’t be able to stop yourself!

Tropical Oatmeal Breakfast Bake | Fabtastic Eats I never used to be a breakfast eater, like never ever. My whole life, I hardly ever wanted breakfast. In high school, Id skip it and grab a bagel at lunch time. The only time I would really eat it, is on Sundays. Before we moved to Maine we would drive up there every other weekend to see our family. And every single Sunday, my grandmother always made a huge brunch. Never missed one. I’m pretty sure she actually still does it for whoever is left there, but being 3600 miles away makes it a little difficult.

Tropical Oatmeal Breakfast Bake | Fabtastic Eats Anyways, once we moved to Maine, after church, every Sunday morning we would go over there, along with all my cousins, aunts uncles, and TRUST, there were a lot of us. But she did it every weekend, and I never ever said no. She always had a huge variety of goods, and it was very rarely the same. The whole family always spent all day there every weekend, even in high school we all hung out there. She lived right on a lake, so in the summer it was boating and jet-skiing, and in the winter, ice fishing, bonfires, and snowmobiling. We loved it, always.

Some of the best moments are just sitting at her kitchen table yapping away while inhaling loaves of bread smothered in creamy cheese. Also, some things never change…that’s still one of my most favorite things!

Tropical Oatmeal Breakfast Bake | Fabtastic Eats But I digress. My point is, that now, I LOVE breakfast. I look forward to it every night before bed with a steaming hot cup of coffee. Exciting life I lead, eh? Honestly though, it’s one of my favorite parts of my day, I love the variety, the sweet, the savory, the excuse for mimosas on the weekends. I genuinely love it! And I seriously miss Sunday brunch at my grandmothers!

This breakfast bake is one heck of a good idea. If you’re hosting a brunch, it’s a great addition to the menu. If you’re like my kids, you’ll snack on it all throughout the day, and hey, I’m not objecting, because it’s pretty healthy too! And if you’re me, you’ll warm it up and enjoy it with your coffee.

Tropical Oatmeal Breakfast Bake

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 16-18 Bars

A healthy tropical breakfast bake loaded with mango, pineapple, coconut, and white chocolate, and cooked to perfection! You won't be able to stop yourself!

Ingredients

  • 3 cups old fashioned oats
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup frozen pineapple pieces
  • 1/2 cup frozen mango chunks
  • 1/2 cup white chocolate chips
  • 1/2 cup shredded coconut
  • 1/3 cup honey
  • 1/3 cup almond butter
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups milk (I used unsweetened vanilla almond milk, but use what you love!)

Directions

  1. Preheat oven to 375°
  2. In a large bowl, toss together the oats, baking powder, cinnamon, nutmeg, salt, pineapple, mango, white chocolate, and coconut.
  3. In a medium-sized bowl, whisk together the honey, almond butter, vanilla, egg, and milk.
  4. Pour the liquid mixture over the dry ingredients and toss to mix well.
  5. Transfer the mixture into a 9x13" pan and pop in the oven for 30-40 minutes until golden brown.
  6. Remove and allow to cool slightly before slicing into bars. Enjoy!

Notes

Store in the fridge in an airtight container, or covered in plastic wrap. Warm in the microwave before serving.
