I love reading in the Summer more than any other time of the year. I don’t even know why specifically. Probably a combination of being outside, sitting and relaxing with the sun, or a nice shady tree, a yummy, fruity cocktail, and the place it takes me too. I’ve been reading muuch more than usual, and I love it.

Something about summer though, makes me get into steamy, romance novels. My husband keeps teasing me..he calls them my old lady books. Whatevvvaa. I like them, well, most of them.

Speaking of my husband, we celebrated our one year Anniversary this past weekend. It came SO fast, I almost completely forgot. What an adventure this first year has been. It’s been fun for sure, and I can’t believe it’s already been a year, we’re going to be celebrating 25 years in the blink of eye. I can’t stand how quickly time goes..on all fronts!

I’m looking forward to many more years with this guy though!

It was also the first official day of Summer this weekend! YAY! Though we’ve been enjoying the hot temps for a couple months now, it’s still the start of something fun every year. One of my favorite things about summer? Grilling. All.of.the.time. We hardly cook inside lately, and I am a-okay with that.

I’ve made these Grilled Thai Shrimp and Peach Skewers countless times already this year. The first time just for me, the second for a party we had, and then over and over again for myself and visiting family. They’re a huge hit every time.

My husbands parents were here two weeks ago, and his dad snuck down at midnight to finish them off. Yah. They’re realllly that good. So simple to make too. The most time consuming part is deveining and peeling the shrimp. But crank up the tunes and you’ll be done before you know it. And it’s seriously worth it. These babies are killer.

Don’t have peaches? I’ve done it without too! JUST as amazing!

I’ve marinated these for one hour, six hours, and 24 hours. Totally your preference, and what you have time for, but no matter how long you do it, they’re fantastic! Enjoy!

Grilled Thai Shrimp and Peaches

Prep Time: 20 minutes

Cook Time: 6 minutes

Total Time: 6 hours, 30 minutes

Yield: Serves 2-4

Sweet and Spicy Grilled Shrimp and Peaches are a mouthwatering addition to your next BBQ!

Ingredients

  • 1 pound shrimp, shelled and de-veined
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • 1" fresh ginger, grated
  • 1 teaspoon sriracha
  • 1 lime, juiced (about 1/8 cup)
  • 2 ripe yellow peaches, sliced about 1/2"

Directions

  1. In a large measuring cup, add the chili sauce, soy sauce, sesame oil, ginger, sriracha, and lime juice. Stir together.
  2. Add the shrimp to a gallon size ziplock bag, pour the marinade over them. Seal and shake a few times.
  3. Set in the fridge for at least one hour, but up to 24 hours. (I've done both, and they're great either way!)
  4. Just before grilling, Skewer the shrimp, alternating with the sliced peaches, save a small amount of the marinade.
  5. Heat your grill to medium heat. Swipe over the grates with a paper towel soaked in oil.
  6. Add the skewers to the grill, brush with the marinade. Cover, cook for three minutes, flip the skewers, brush with a little more marinade. Cover, and cook for three minutes more, until the shrimp are pink and cooked through.
  7. Remove from the grill and enjoy!
