Trying to find a house in seven days in a place that we have never been too and don’t know all that much about, is kind of stressful, and definitely a giant pain in the arse. If I’ve been a little sparse here as of late, you can just envision me with a latte in hand and my other hand on my head, because this is tough.

Rent out here in Washington is pretty ridiculous, and way over priced. After looking at an obnoxious amount of houses the past couple of days, we’ve decided that putting all that money every year into rent is a complete waste, so we are going to buy. Yep, buy a house.

It’s kind of exciting, and really scary. I’ve been crazy particular when it comes to finding something to rent, I can’t even imagine how much more neurotic I will be about buying. I hope my husband doesn’t kick me out by the end of it. I’m kidding. Kind of. I think he wants to slap me silly after this little house hunting adventure, he has no idea what he’s in for when it comes to buying one. 😉

We’ll rent for the next six months, because obviously buying a house takes some time and we definitely can’t live in a hotel much longer. (Heck if we’re here another two nights I think my husband may blow a gasket. I’m kind of with him on that one.) So any advice or tips on shopping for a house to buy is much appreciated. Gimme what you got!

In the meantime, I’ll keep giving you beyond tasty foods, like this here Mexican Meatball Soup. Holy heck is this one goooood. I’ve mentioned before that I’m not a big leftovers lover, but I ate this one for three days straight. It is SO warm, cozy, and comforting. It reminds me of curling up in front of the fireplace with a whole lot of love.

This soup is homey and healthy. Flavorful and filling. We loved this one right down to the very last drop. You must try it before soup season ends. Though, I eat soup all year round, anyone else?

Mexican Meatball Soup

Mexican Meatball Soup

Warm and comforting chicken meatball soup, spiced to perfection. So perfect for these cool evenings!

Ingredients

    For the Soup
  • 1 Tablespoons olive oil
  • 1 small red onion, chopped (about 1/2 cup)
  • 1/2 jalapeno, seeded minced
  • 2 garlic cloves, minced
  • 1 zucchini, chopped in 1/4" pieces
  • 1 leek, greens only, rinsed and chopped
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon cumin
  • 1 quart low sodium chicken broth
  • 2 cups water
  • 28 ounce can diced tomatoes
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 15 ounce can whole corn, drained
  • lime juice
  • For the Meatballs
  • 1 pound ground chicken
  • 1/2 teaspoon garlic powder
  • 3 slices whole wheat bread, chopped to crumbs, or 1/2 cup panko
  • 1/2 cup fresh cilantro
  • 1/2 a jalapeno, minced
  • 1 teaspoon cumin
  • 1 1/2 teaspoons oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Heat olive oil over medium heat. Add onion, jalapeno, and garlic.
  2. Saute 5 minutes, until translucent
  3. Add the zucchini, leeks, oregano, and cumin. Stir and cook 4-5 minutes to begin softening.
  4. Add chicken broth, water, tomatoes, salt, and pepper. Simmer for 15 minutes.
  5. While the soup is simmering, make the meatballs.
  6. In a large bowl, combine the ground chicken, garlic powder, bread crumbs, cilantro, jalapeno, cumin, oregano, salt, and pepper. Mix well with hands.
  7. Form into 30 mini meatballs. Add them to the soup along with the drained corn.
  8. Cook 10-20 minutes on medium-low.
  9. Serve with freshly squeezed lime juice. Enjoy!
