It was gorgeous outside yesterday, which was a nice change from the freezing rain we’ve had since last Saturday. It was warm, sunny and the leaves were everywhere. I took full advantage and took my kids outside for a little Fall photo shoot. I’m always taking pictures of my kids..all day long, but it’s always with my iPhone, (seriously, I have to dump my photos once a week on the computer just to make room on my phone..yah, i take about 3473 of the same thing..it’s hard to get a great shot with kids, so you just keep on going and hope one turned out perfect!)

So yesterday I thought Id take some nicer pictures, that aren’t with my phone, and pray that one turns out good. WELL, let’s just say it started out with two kids screaming…of course, and climbing all over me refusing to do anything but cry. So I figured I’d try again today. Then, my little 10 month old, just got up and walked away and that was all it took for my almost 2 1/2 year old (oh dear God. So fast!) They took off in the leaves and started playing..yay!

BUT do you think that I got one decent picture of the two of them together. That would be a negative, Captain. I’m not even sure I have a photo with them both fully in the frame…as much as they love moments of playing together, they also really love exploring and playing on their own. And that’s what happened yesterday. You know, I don’t have more than 1-2 photos of them together smiling. And the ones I do have, my youngest is an itty bitty newborn. I’ll just have to keep at it. At least I got some great photos that are totally worth blowing up and framing!

Let’s talk Pizza! This particular pizza is one of a kind, and it might sound crazy, but all the flavors together, totally work! We’ve got tart, juicy raspberries, sweet apple slices, caramelized onions, nutty Gruyere, salty Parmesan, and to top of it all off a drizzle of thick, rich balsamic drizzle. This pizza is kind of perfect in it’s own little way. I loved every bite of it..there were so many flavors my palate was lighting up like the fourth of July. But totally in a good way!

Raspberry, Apple, Gruyere Pizza with a Balsamic Glaze

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 1-12 inch Pizza

Gruyere, Parmesan, Apples, Raspberries, Caramelized Onions..this Pizza is fruity, cheesy, and absolutely divine, topped off with a thick balsamic glaze!

Ingredients

  • 1 pound of your favorite pizza dough
  • 1 Tablespoon butter
  • 3 Tablespoons olive oil, divided
  • 1 vidalia onion, sliced
  • 2 garlic clove, minced
  • 2 1/2 cups freshly grated Gruyere cheese
  • 1/2 an apple, thinly sliced
  • 1/2 cup fresh raspberries
  • 1 cup freshly grated Parmesan cheese
  • balsamic glaze for drizzling

Directions

  1. Add the butter and 2 Tablespoons of the olive oil to a large saute pan over medium heat.
  2. Add the sliced onion and toss to coat. Saute for 15-20 minutes to start to caramelize.
  3. Preheat oven and pizza stone to to 425
  4. Roll out your pizza dough into a 12 inch round, and pre-cook it for 3-4 minutes.
  5. Remove the crust from the oven and spread remaining olive oil and sprinkle on the minced garlic.
  6. Layer on the Gruyere cheese, followed by the apple slices and the raspberries.
  7. Sprinkle the Parmesan across the top and pop it in the oven for 8-10 minutes.
  8. When it comes out, drizzle on the balsamic glaze, serve and enjoy!

  2. Yes yes yes!!!!!! Ohmygosh. This looks seriously amazing. I loooveee all those flavors together and it just looks so darn pretty. Oh, and by the way, is it just me or did you get a new blog design??? I hope you haven’t had it forever and I’m just now noticing, I’m usually on my phone so that could be entirely possible. Love it!!!

  3. OMG, you had me at Gruyere! I am so obsessed with that cheese. But I’m intrigued by the apples and raspberries too – I would never have though to put them on a pizza.

  6. I have trouble getting my two kids in a picture together too. It seems when they are together, and my camera is ready, as I take the pictures inevitably one of their heads is turned around. Great picture, the pizza looks delicious.

    • It’s so hard! Im trying desperately to get a good one for xmas cards to no avail! If you ever learn the secret, let me know! ;)
