I bought everything to do my own shellac manicure at home. Basically I was pretty much tired of spending so much at the salon all time time. The initial investment was nothing, and it pays for itself and more in just two manicures. Everyone was raving about how great it is, how long it lasts, how much money you save, how easy it is, etc. I did my first one last night, and here’s my problem with it…it took FOREVER. Like A full two episodes of Boardwalk Empire. I couldn’t believe it. I’m praying that it was just because it was my first time and I was being super careful. Hopefully I start to get the hang of things otherwise, I’ll probably never end up doing it.

How long into the winter do you run outside with your kids? There is a gym here that has “in-sight”care, which is basically a room where the kids play and there are treadmills, elliptical’s, etc. facing the kids so you can watch them while you work out. I’ve tried it once, and ended up having to leave after 15 minutes. My ten month old is a littler dare-devil and would climb up the stairs and go down the slide face first over and over again, giving me a few minor heart attacks. He thought it was hilarious, but after a little while, he started hitting his head, or getting tired and would just scream! It was kind of a disaster.

It’s so cold outside, and bundling my kids all up is kind of a lot of work, and Ive been using that excuse to not go run. It’s lame, I know. Plus the stroller crashed a couple times, so my two year old is petrified if I go any faster than a walking pace. Oops. Anyone have any tips or tricks for Fall/Winter workouts with kids? Please don’t say living room workouts, other than JM 30 day shred, I hate them. Though I hear T-25 is pretty effective? I just really enjoy running.

Speaking of being healthy, these pumpkin muffins! They’re low-fat, low-cal, made with whole wheat flour, ground flax seed, and oat bran. There is no butter or oil, they probably sound really bland? Absolutely not! My mom and grandmother thought they would be dense little rocks since a lot of “healthier” muffins turn out that way..but I am happy to report that they were pleasantly surprised. I made a big batch for my mom to take to work in the mornings, and my dad and brothers ended up eating about 3/4 of them..they had no idea that these were good-for-you muffins! I call that a win!

Whole Wheat Flax Bran Pumpkin Muffins

Healthy, good for you, pumpkin muffins, made with whole wheat flour, flax, and oat bran! They're loaded with lots of flavor and are so moist! These Pumpkin Muffins would be a perfect healthy breakfast or snack!

Ingredients

  • 1 1/2 cups whole wheat flour
  • 3/4 cup ground flax-seed
  • 3/4 cup oat bran
  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 cup pure pumpkin
  • 3/4 cup skim milk
  • 1/2 cup unsweetened applesauce
  • 2 beaten eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 400 degrees.
  2. Spray and flour the cups of two cupcake pans.
  3. In a large bowl, whisk together the flour, flax, bran, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  4. In a separate bowl combine the pumpkin, milk, applesauce, eggs, and vanilla, whisk together until combined.
  5. Pour the wet ingredients into the dry and fold together with a rubber spatula until just mixed.
  6. Stir in the chopped pecans.
  7. Fill the muffins cups about 2/3 the way full.
  8. Pop into the oven at 400 degrees for 5 minutes. Then lower the temp to 350 and cook for an additional 15 minutes. Check to see if they're done by inserting a toothpick down the middle. If they're not cook in additional 3 minute increments.
