I watched it during their naps and after they went to bed, meaning I stayed up far to late. Oh well. That show is so bad its good. I figured since I watched it since the very first season, I should follow it through. Kind of like Greys, it’s so bad now, but I’ve got to watch it to the end! Anyhoo, I have a major crush on Brant Daugherty now. Like totally in love, I think it was the part he played.

Pumpkin Brown Sugar Pecan Pancakes

Fluffy Pumpkin Spice Pancakes, sprinkled with Chopped Pecans and Caramelized with brown sugar! A tasty, warm, and comforting, Fall breakfast!

Ingredients

  • 1 1/2 cups milk
  • 1 1/2 cups pure pumpkin puree
  • 2 eggs
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons apple cider vinegar
  • 2 cups all-purpose flour
  • 4 Tablespoons brown sugar, plus more for sprinkling
  • 2 teaspoons baking powder
  • 1 Tablespoon baking soda
  • 1 teaspoon all-spice
  • 1 Tablespoon Cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cloves
  • 2 cups pecans, divided
  • 2-4 Tablespoons Butter for the griddle

Directions

  1. In a large bowl, whisk together the milk, pumpkin, eggs, oil, and vinegar.
  2. Combine the flour, brown sugar, baking powder, baking soda, all-spice, cinnamon, nutmeg, and cloves.
  3. Mix the dry ingredients into the wet until just combined.
  4. Heat a lightly buttered griddle over medium-high heat, scoop pancakes in 1/4 cup increments, sprinkle with 1-2 Tablespoons chopped pecans, and 1 Tablespoon brown sugar.
  5. Brown on both sides until cooked through. Serve in small stacks with additional pecans and brown sugar. Drizzle with maple syrup if desired! Enjoy!
