I gather Ive been somewhat flaky lately..my apologies, but like Ive mentioned, I am trying to soak up as much time with our family and friends in the next couple of months before we leave! Right now, life is a priority, and I don’t want to miss a minute of it! With that being said, I think about “you guys” and blogging all.the.time. I miss it, but Ill have all the time in the world once we move!

Last weekend my hubs and I left our kiddos with my parents for FOUR NIGHTS. I had a rough time with it at first..it took me about 24 hours to adjust. Ive never been away from them for more than an 8 hour period, and never a whole night without them! You can think I’m ridiculous, my husband does, lol but he knows how much I love and miss them! I was so glad we did though! Since we knew we wouldn’t be able to take a honeymoon until next year, we took the opportunity to head up to a resort in Bar Harbor for the weekend, and it was absolutely gorgeous! It was so relaxing, and easy, beautiful, and fun!

We had a lot planned to do, a winery tour and tasting, hike Cadillac Mountain, a Sunset Boat Cruise, etc. Well, we did none of it! ha! If we had had a whole week we probably would have gotten to it all, but it was SO nice just relaxing by the water, cocktails in hand, reading books, listening to music, NOT being bothered every two minutes or having to worry about our kids, being able to just have a few drinks without any concerns was the best vacation we could have! Its always go, go, go so once we started relaxing we realized we didn’t want to keep going, we just wanted to do nothing! And it was GLORIOUS!

If you follow me on Instagram you saw a few pictures from our weekend, mostly cocktails 😉 haha but I didn’t really pull out my DSLR more than once or twice since we didn’t do much more than sit in the sun, drink, shop, and go out to eat at A LOT of restaurants! That was probably one of the best parts! Going out to eat, 2-3 times a day, anywhere we wanted without worrying if it was kid friendly! In all honesty though, we take our kids out a ton, so we don’t worry that much about restaurants being okay for our kids, because we go either way, and they know how to behave, so its not so bad. But still, it was nice to get dressed up a lot, (wear heels!!) and go out with just my husband! It was a beyond perfect weekend, and I want to do it again, and again!

Shall we talk about this sandwich now? I think yes, because it would be a shame otherwise. Um its one of the best we’ve ever had. My husband just asked me what I was blogging about tonight..me: you know, that sandwich (because I made it a few weeks ago) him: omgthatwassofreakingood. make it again. me: umm yes sir?…so yes, its awesome. The asparagus pesto is so flippin’ killer. Its kind of sweet but not, savory, slightly salty, garlicky, fresh, warm. Ugh Its perfect. And it pulls this whole sandwich together, THAT, and the sun-dried tomatoes..gah, what a perfect combination. Melty cheese always helps, and you could totally leave out the chicken if you’re vegetarian, and it would be just so so good too!

This will be on rotation in our house. Its perfect and so quick! Its a great weeknight meal, or easy lunch. The pesto can be made ahead of time and refrigerated. I would double the pesto recipe next time so that I have more leftover. Imagine spreading this on a pizza too..ooh I think I may have to try that. Yes, definitely.

Chicken, Sun-dried Tomato, & Asparagus Pesto Sandwich

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 2 large, filled Sandwiches

Chicken, Sun-dried Tomato, & Asparagus Pesto Sandwich

A creamy, garlicky, asparagus pesto brings together this sun-dried tomato, chicken, and mozzarella sandwich into an irresistible meal!

Ingredients

    Asparagus Pesto
  • 1/2 bunch of asparagus, ends trimmed
  • 4 garlic cloves, peeled
  • 1/4 cup fresh Parmesan cheese
  • 1/4 cup slivered almonds
  • About 20 fresh basil leaves
  • olive oil
  • salt and pepper
  • For the Sandwiches
  • 4 slices of bread
  • 4 slices fresh mozzarella cheese
  • 1/3 cup chopped sun-dried tomatoes
  • About 2 cups cooked chicken
  • red onion slices (optional)
  • About 2 cups cooked chicken

Directions

  1. Preheat oven to 400 degrees.
  2. Spray baking sheet with cooking spray. Chop asparagus in thirds and toss onto to pan in one even layer. Add the peeled garlic coves and toss in the oven for 10 minutes.
  3. In a food processor, puree together the asparagus, garlic cloves, Parmesan, almonds, and basil. Drizzle in olive oil until desired consistency is reached, smooth and past-like, spreadable.
  4. Sprinkle with salt and pepper to taste.
  5. In a grill pan, or skillet, over medium heat, start toasting the bread slices. Once both sides are golden brown, place on two of the slices, the cheese to start melting.
  6. Follow with the sun-dried tomatoes, chicken, and red onion.
  7. On the other two slices of toast, smear on a couple tablespoons each with the Asparagus Pesto.
  8. Remove from the grill pan once the cheese is melted and enjoy!
