I got to go ‘fun’ shopping on Monday! You know the kind. When you get to go without kids, you can get Starbucks, you can take your time, browse sloooowly, and buy things that you don’t necessarily need, but are fun to have, and maybe a little overpriced, but you deserve it! Yah..it was the best time shopping in awhile..I didn’t feel rushed, I got fun products..basically I want to make it a weekly event.

Last night I finalllly got caught up on Nashville. It only took me a month. But ohmygod I can’t wait for the season finale tonight…ahhh the drama! The one problem about that show that I have, is it makes me feel really bad about my hair. Theirs is always so pretty, and 99.9% of the time, mine is tied up in a messy bun. Not so pretty.

My camera broke over the weekend. I’m having a heart attack about it until I know what it needs. It was working all day Saturday for me, then I went to take a picture Sunday and no dice. I’m flippin out. Halllllp.

This post kind of feels like happy hour with all the random topics. So let me get on with it. These Asian Inspired Stuffed Sweet Potatoes are AWESOME. I took the incredible salsa from Mondays post and threw it into a sweet potato with some seasoned chicken and sour cream, topped with a little fresh cilantro, and served it along side a salad. It was completely inhaled. That salsa truly makes everything better. The flavors, the textures..it was all there and it was delicious! I roast a chicken at the beginning of each week to have for sandwiches and salad, so if you have pre-cooked chicken, this is the most flavorful, quickest, lunch or dinner! Enjoy!

Yield: 2 Large Stuffed Sweet Potatoes (Easily Doubled)

Asian Inspired Stuffed Sweet Potatoes

An incredible hoisin glazed salsa atop sweet potatoes with seasoned chicken creates a healthy, filling, and beautiful meal!

Ingredients

Directions

  1. Scrub and dry your sweet potatoes.
  2. Poke them with a fork and pop them in the microwave for 10 minutes on high, until soft.
  3. In a small bowl, mix together the five spice, garlic powder, and onion powder.
  4. Mix 1 teaspoon with the sour cream, and toss the remaining seasoning with the shredded chicken.
  5. Slice your cooked sweet potatoes lengthwise. Top each with salsa, seasoned chicken, a dollop of sour cream, and cilantro. Enjoy!
