Do you ever sit down to do something and get distracted by one thing after another and by the time you get back to what you originally started, its almost two hours later. That definitely just happened to me, and sadly it happens practically every single time I sit down at the computer. And when I start cleaning..it leads to about a million other projects! Phew!

So guys, I have a feeling a lot of you are probably about to roll your eyes at me, but I don’t care, I’m saying it anyways. I am going to be 25 in exactly 12 days from today. To many of you, I’m probably still a “baby”, but to me that feels old. My hubs turned 30 this year, and I can’t stop teasing him. Now I am going to be closer to my 30’s than to my early 20’s. gah! I’m sure my 30’s will be great, and all sorts of fun on there own, but I’m loving my 20’s and I want them to last forever. Ok, I’m done whining, for now. No promises you’re done hearing it permanently.

What I realllly want you to know about is this Watermelon Cucumber and Feta Salad! It is AWESOME. It is so light and refreshing. It has slightly sweet watermelon, cool cucumbers, salty feta, and fresh mint. Uhh the flavor combination is incredible! It is such a surprise to the palate, but a GOOD surprise! You’ll demolish the entire bowl! This recipe makes about 3-4 cups, but can sooo easily be doubled or tripled! This will definitely be added to our BBQ’s this Summer! It is such a fantastic healthy side!

Watermelon, Cucumber, and Feta Salad

Prep Time: 10 minutes

Total Time: 1 hour

Yield: 3 1/2 Cups

Watermelon, Cucumber, and Feta Salad

Sweet Watermelon, cool Cumber, salty Feta, and fresh Mint leaves come together in a refreshing, light, and healthy Salad!

Ingredients

  • 3 cups cubed watermelon
  • 1/2 cucumber, partially peeled and chopped
  • 2 Tablespoons Feta, freshly crumbled
  • 2 Tablespoons Champagne Vinegar
  • 10-15 mint leaves

Directions

  1. In a bowl combine all the ingredients and toss.
  2. Allow to sit in the fridge for at least an hour, stirring occasionally, for the flavors to marry.
  3. Enjoy!
