Banana Waffles with Peanut Butter Maple Syrup

Hi! It’s Monday already..seriously, where did the weekend go? I didn’t realize it was Sunday night until about 10 o’clock last night. Oops! I hope you all had a very, very Happy Easter or Passover! We had a busy, fun-filled weekend, full of delicious food, sweets, a little baking, and lots of cooking! We spent Easter at my moms house and it was fabulous! We never go wrong there…I swear I get any cooking chops I have from her..she’s wonderful! I did make these incredible stuffed mushrooms though..ohmahgah..I can’t wait to share them with you guys..they were gone 10 minutes after they came out of the oven. Seriously..the best..I got lots of compliments and recipe requests..coming soon!

What I really want to talk about today though are these Banana Waffles. With Peanut Butter Maple Syrup. I know, I know..Banana and PB are a very popular combo, but honestly folks, these are probably the best waffles Ive ever had. Uh-huh, and I’m not even a huge banana fanatic. The peanut butter maple syrup, MAKES these babies. Some people already spread PB on their waffles, but guys, melt it together with maple syrup, THEN pour it on…ahh I can hear the birds chirping. (<– huh?)

There is no sugar in these, just a tad bit of honey, and hardly any butter at all. They’re made with with half whole wheat flour and ground flax-seed, oh and there is fruit in it. I mean, these are practically a health food. Like my other waffle and pancake recipes, I always make the whole bowl of batter and freeze them. I pop them in the toaster or microwave for my son and/I  to eat all week. These banana waffles are no exception! They freeze and reheat perfectly! These waffles are definitely my favorite to date!

  1. I’m soooo in love with PB maple syrup. I usually do a super unhealthy ratio of almost 1:1 PB and syrup (weekend splurge… totally okay?!) and actually pour it over banana pancakes. I like the idea of a banana waffle though — less of the syrup will be able to escape!

  2. Peanut butter maple syrup?! Oh my gosh. I never knew such a thing existed, but now I need to try it immediately.

  3. These look unreal! Peanut butter maple syrup what?!!!

  4. Peanut butter maple syrup?!? You pretty much blew my mind with this one! I wish I wasn’t so lazy in the morning – I usually just grab a yogurt and go, but this would be about 100x better!

    • haha it blew my mind how good it turned out! I only make breakfasts like this generally on the weekends..Im a grab and go weekday breakfast girl too! :) This is pretty fab though..I wouldn’t mind it daily!

  5. Peanut butter maple syrup sounds too delicious! All the family would go crazy for it, great idea :)

  6. Alaina, that peanut butter maple syrup alone has me salivating to try these. :) They look wonderful !I love banana and peanut butter together. Saving this recipe!

  7. My kids & hubby ALWAYS spread peanut butter on their pancakes & waffles, then pour on the syrup. Why did I never think of combining them as a new syrup?! What a great idea! I’m totally doing this next time and I’m sure to score big points with my boys! :) Thanks for sharing!

  8. I”m sorry but I just can’t even stand how awesome this is!

  9. I’m planning to make these in the morning. Could I substitute extra flour for the 1/4 c flax seed?

    • Sorry for the delay in response! You can definitely sub flour, but I wouldn’t do the entire 1/4 cup, or they could be to dry. Try 2 Tablespoons! Hope this helps!

  10. Making these right how for dinner! Waffles smell amazing. The syrup isn’t combining for me. It’s specks of peanut butter on top of the syrup. Guess it matter what kind? I’m using organic sure maple syrup and wegmans organic PB. But it has the oil, etc in it just like others so I’m not sure what the difference would be.

    • Funny, I just made these yesterday! Sometimes the syrup takes a little time to come together. Try removing it from the heat and letting it sit for a few minutes before stirring it again, mine had to cool down slightly first, but it did come together! hope this helps, and hope you enjoy!
