It’s March people. Already. I can’t even believe it. I swear, the more kids you have, the faster time goes. Only 112 days until our wedding. There is so much to do and not enough hours in the day. I totally understand why people hire wedding planners now. Especially with two kids..time consuming stuff right there.

All this snow, rain, and slush is killing me!! I’m getting cabin fever bad these days. I ordered a double stroller over the weekend so that I can at least get outside with the boys for a little bit each day..but it has been raining or snowing since the day it got here and the next week is supposed to be the exact same. Oy vey.

I still haven’t gone to run errands or go grocery shopping with both boys yet. The most I do with both is go to my parents house or Drs appointments. I’m seriously contemplating a trip to Trader Joes with them today though..well see how that works out. Any tips for grocery shopping with a newborn & toddler? (How do you even fit them both in the carriage with food?) I’m scared.

Okay, so this Lime Spiked Black Bean Dip is killer. Until the last year or so, I’ve never really cared for black beans. Now we probably eat them 2-3 times a week in one way or another. They’re so good for us, being high in protein and dietary fiber, and they’re filling. My son LOVES them, he just eats them by the bowls..lately I kind of fancy them that way too!

Anyhow, since I’m attempting to try and drop some of these baby LB’s..eating healthier is obviously a pretty big part of it. I’m a huge snacker, I do it all day long and if I’m not careful, I can easily blow my daily calorie limit by noon. So I needed healthier options to just grab, like I’ve said, sometimes I’m all about instant gratification..if I don’t have something ready then I’ll end up grabbing something junky. So this lime black bean dip is perfect! I looove the strong presence of lime in this dip, it gives a plain black bean dip a huge boost! I highly recommend this one folks..people will devour it!

Black Bean Dip

Total Time: 10 minutes

Yield: 4 cups

Black Bean Dip

A fabulously tangy black bean dip!

Ingredients

  • 2 (15 ounce) cans, reduced-sodium black beans
  • 1/2-2/3 cup lime juice, about 3 limes (Start by adding 1/2 a cup and increase as you taste. We liked it really lime-y so went for the whole 2/3 cup!)
  • 1/8 cup chopped red onion
  • 1/2 cup cilantro
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1 clove of garlic

Directions

  1. In the bowl of a large food processor add all the ingredients listed above and pulse until smooth.
  2. Store in an airtight container in the fridge for up to a week.
  3. Serve with tortilla chips, pita chips, or veggies. Enjoy!
