Today my sweet baby boy is exactly one month old. I can hardly believe it, he already looks different than he did four weeks ago..its amazing how fast they change, grow, and develop their sweet little features. He needs to slow down, otherwise Ill end up with baby fever all over again, and well lets just say I need more time in between the next (possible) go around. He’s so sweet. My little man is so incredible with him. I feel like the luckiest momma. But I want to ask all you mommas something serious…

Do any of you watch How I Met Your Mother, its probably one of my favorite sitcoms (aside from Two and a Half Men and The Big Bang Theory) But did any of you happen to catch this weeks episode where Lily guilty confessed that sometimes she wants to “pack up in the middle of the night, run away, and never come back”?! Did that resonate with anyone? It made me think a little..I don’t ever get the feeling that I don’t want to come back, I couldn’t imagine leaving my babies, but sometimes I feel like I need to get out for a few hours to re-gain some sanity. It makes me sad and gives me that horrible ‘momma guilt’. Please tell me I’m not alone.

Ok, on a little lighter note. I made pizza! Its an incredible pizza..full of some of my favorite flavors such as bacon, caramelized onion, sun-dried tomatoes, CHEESE..it’s AWESOME. And the sauce..I was so skeptical at first..I mean, its milk-based, seems weird, right?! Oh no, not at all. It was beyond perfect for this pizza.

You should totally make this. For dinner. For that quite popular Football game coming up in a couple of weeks..who doesn’t love pizza and football? Speaking of that game…one of my favorite thing about game days, especially the Superbowl, are all the dips..I love it. So the week leading up to the game, each day I’m going to post a new dip..why don’t we dub it ‘Dip Week’, I know, I’m so original. So be sure to check back for some great dip ideas. Oh, and in the meantime, make this pizza 🙂

Bacon, Spinach, and Sundried Tomato Pizza

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 1-12 inch Pizza

Ingredients

  • Dough (my go-to)
  • 1 Tablespoon butter
  • 1 yellow onion (1 cup), sliced
  • 6 slices maple bacon, chopped
  • 10 ounce bag, frozen spinach
  • 1/4 cup sliced sun-dried tomatoes
  • 2 Tablespoons Cornmeal
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 1/2 cups Fontina cheese, freshly grated
  • For the "Sauce"
  • 1 Tablespoon butter
  • 2 garlic cloves, minced
  • 3 Tablespoons all purpose flour
  • 1/2 teaspoon black pepper
  • 1/4 cup skim milk
  • 1/4 cup whole milk

Directions

  1. In a skillet over low heat, melt 1 TAblespoon of butter.
  2. Add the sliced onion, cover, tossing occasionally, until they reach a nice golden brown, about 20 minutes.
  3. With a pizza stone inside, preheat the oven to 475 degrees.
  4. In a separate skillet over medium-low heat, add the chopped bacon. Cook until crisp, about 5 minutes.
  5. Remove the bacon to a paper towel, reserving about two teaspoons of the bacon grease.
  6. Add the frozen spinach to the bacon grease, and cover until soft and thawed.
  7. Strain the spinach, squeezing out as much of the moisture as you can.
  8. Cover your pizza peel with cornmeal.
  9. Roll out the dough to a 12 inch circle, and place on the pizza peel.
  10. To make the sauce, In a small saucepan over medium-low heat, melt 1 tablespoon of butter.
  11. Add the minced garlic and cook for two minutes.
  12. Stir in the flour, cook for 30 seconds.
  13. Slowly pour in the milk, whisking constantly until sauce bubbles and thickens. About 4-5 minutes.
  14. Remove from heat, and using a rubber spatula, spread evenly over the pizza dough.
  15. Start assembling the pizza, first with the spinach, followed by the caramelized onions, and lastly the sun-dried tomatoes.
  16. Pop in the oven for 8-9 minutes, pull it out and add the cheeses and the crispy bacon.
  17. Send it back into the oven for another 4-5 minutes until the cheese is melted and the crust is golden brown.
  18. Remove from the oven, slice and serve!
