TODAY. Is the first day that Ill be home with two kiddos by myself, all.day. Please dear God, help me balance it all. Please dear God, don’t make me have to leave the house! I know I need to go grocery shopping, and in my head I have this great plan to do it successfully, but umm, a lot of my plans end in disaster. And that particular one, I can see not working out.

For example, 95% of the time, my 19 month old is great sitting in the carriage for the entire trip, as long as I give him an apple right when we walk in. But every once in awhile, he refuses it, stands up, and wants out. That could be bad if I have a newborn strapped to my chest. Second scenario, said newborn screams the entire time and just won’t have being strapped to me at all. There are plenty more disasters that Im envisioning…getting in and out of the car in the freezing cold is part of it.

I was reading a fellow bloggers Facebook status with pretty much the same concerns that I have…leaving the house with two youngins..and commenters said to use two carts! One for each child, push one, and pull the other..say WHAAAA?! I have a hard enough time moving one up and down the aisles without hitting people and knocking things over, (it happens) I couldn’t even imagine doing it with two giant carts, plus how do I keep a close eye on both of them..disaster. Any tips from you mommas are totally welcomed, because leaving the house by myself with a 19 month old and 4 week old, has been causing me anxiety for weeks. Silly? Maybe. I’m sure Ill get over it someday. Today is not that day.

Moving on. Blood Orange Glazed Loaf Cake aka so freakin’ tasty! Its loaf cake..so you could eat it for breakfast and not feel bad, and it is equally as incredible and satisfying for dessert. I definitely ate this for both, oh and as a snack in the middle of the day. The cake has freshly squeezed blood orange in it, the syrup is blood orange, and the glaze is, omg, blood orange too!

This blood orange glazed loaf cake is wonderful, moist, has a perfect balance of sweet and tart, and its pink! So its automatically awesome! You definitely want to try this out! Enjoy!

Blood Orange Glazed Loaf Cake

Prep Time: 15 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 10 minutes

Yield: 9x5 inch loaf cake

Ingredients

    For the Cake
  • 3/4 cup cake flour
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup + 2 Tablespoons granulated sugar
  • 4 eggs, room temperature
  • 1 1/2 Tablespoons orange zest
  • 2 Tablespoons freshly squeezed blood orange juice
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, melted and cooled
  • 1/4 cup sour cream
  • For the Syrup
  • 3 Tablespoons granulated sugar
  • 3 Tablespoons freshly squeezed blood orange juice
  • For the Glaze
  • 1 cup powdered sugar
  • 2 Tablespoons + 1/2 teaspoon blood orange juice

Directions

  1. Preheat your oven to 350 degrees, grease a 9x5" loaf pan.
  2. Sift together the flours, baking powder, baking soda, and salt. Set aside.
  3. In the bowl of your stand mixer, fitted with the paddle attachment, mix together the sugar and eggs.
  4. Mix in the orange zest, orange juice, and vanilla.
  5. With the mixer on slow, mix in the melted butter.
  6. Mix in half of the dry ingredients, followed by the sour cream, and then the remainder of the dry ingredients.
  7. Pour into the prepared loaf pan and pop it into the oven.
  8. Bake for 20 minutes then turn the temperature down to 325, and continue to cook for 30-35 minutes.
  9. While the loaf is in the oven, in a small saucepan over medium-low heat, make the syrup by mixing together the sugar and juice until the sugar is completely dissolved.
  10. Once the loaf is done and has cooled for 5 minutes, remove from the pan and transfer to a cooling rack. (*Easy cleanup if you put something underneath the rack to catch the coming drips!)
  11. While the loaf is still warm, poke lots of holes in it with a fork and slowly pour the syrup over it.
  12. To make the glaze, add the blood orange juice to the powdered sugar until you reach desired consistency.
  13. Allow the loaf to cool completely before pouring the glaze over the top.
  14. Slice & Enjoy!
