I hope you all had a wonderful weekend! Mine was very productive! Ive had an impossibly long to-do list that wasn’t showing any progress, until this weekend! We got lots done and I’m feeling almost ready for this little guy to get here! ๐Ÿ˜› He’s due in less than two weeks..I think he’ll come right around his due date, but my fiance is pretty convinced he’ll come early…any guesses?!

I have an appointment tomorrow morning..so we’ll see if there is any progress…the good news is, they’re thinking this one won’t be as big as my first..which would be SPECTACULAR..my son was 10 lbs 6 oz when he was born..I would love a smaller babe this time! ๐Ÿ˜‰

In the meantime, I’m still enjoying lots of wonderful holiday treats! Like these incredible Double Chocolate Peppermint Glazed Cookies! Oh they’re so good! They’re rich, so chocolatey, super soft and chewy on the inside, with a little crunch on the outside!

The peppermint glaze goes perfectly with the indulgent, double chocolate cookie..it tastes like Christmas in your mouth! These beauties went so fast, I couldn’t keep them in the house! I definitely highly recommend these beauties! The peppermint glaze combined with the soft chocolate couldn’t get any better!

Double Chocolate Peppermint Glazed Cookies

Double Chocolate Peppermint Glazed Cookies

Ingredients

    For the Cookies
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 4 ounce package chocolate pudding, dry
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 1/4 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 Tablespoons unsweetened cocoa powder
  • 1 cup chocolate chips
  • For the glaze:
  • 3/4 cup powdered sugar
  • 1/4 teaspoon peppermint extract
  • 4 1/4 teaspoons water

Directions

  1. Preheat oven to 350 degrees
  2. In the bowl of a stand mixer cream together the butter and sugars.
  3. Mix in the dry chocolate pudding package
  4. Add the eggs one at a time, fully incorporating each one.
  5. Mix in the vanilla.
  6. Sift together the flour, baking soda, salt, and unsweetened cocoa powder, add it to the wet ingredients, mix until just combined.
  7. Stir in the chocolate chips.
  8. Drop in tablespoons on parchment paper lined baking sheets.
  9. Bake 8-10 minutes, remove, and cool for 2-3 minutes before transferring to a cooling rack.
  10. While the cookies are baking, make the glaze by mixing together the powdered sugar, peppermint extract, and the water.
  11. Once the cookies are fully cooled, drizzle the glaze over the cookies, and allow the glaze to harden before serving. Enjoy!
