Cinnamon Chip-Toffee Cookies

Its Monday. Its December. You deserve more cookies. Holiday cookies are everywhere right now and I couldn’t be more thrilled. This HAS to be the month where the most cookies are made nationwide..it has to be! The amount of cookies people make, receive, & consume between Thanksgiving and Christmas is out of this world. (Even though technically October is National Cookie Month..makes no sense to me.)

I love cookies, mostly I love the cookie dough first, but then there is just something about a soft, chewy, vessel which can contain any number of ‘toppings’. I feel as though you can put almost anything in a cookie. They’re definitely my fiances go-to dessert. I’m not sure which he likes more, cookies or peanut butter whoopie pies..either way..the man is happy. (But he doesn’t like sugar cookies!! GASP!)

My son is another cookie lover..I have to keep changing out the hiding places because at 17 months, he grabs my hand, drags me into the kitchen and points to where he knows the cookies probably are..smart cookie. (pun intended) He loooves them, and he loves helping me make them..I had to give up my spatula licking habit when he learned what it was..that sweet treat is alll his now!

A couple weeks ago, I made these Cinnamon Chip-Toffee Cookies. I kept half, (mostly because I ate them all before I got a chance to get them out of here), and brought the other half of the batch to my parents house for my brothers. These cookie are stupendous! I have been fully obsessed with these Cinnamon Chips since they’re only seasonal..(that’s a sad reality) and toffee bits, though sweet, add a wonderful crunch and flavor to the cinnamon.

Cinnamon Chip-Toffee Cookies

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 2 Dozen Cookies

Ingredients

  • 1 1/2 sticks unsalted butter, melted and cooled
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 1 egg + 1 egg yolk, at room temperature
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 2 cups + 2 Tablespoons all purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup toffee bits
  • 1/2 cup cinnamon chips

Directions

  1. Preheat your oven to 325 degrees
  2. In a large mixing bowl, whisk together the melted butter and both sugars until combined
  3. Whisk in the egg and yolk until fully incorporated.
  4. Add in the vanilla and cinnamon.
  5. Sift in the flour, cornstarch, baking soda, baking powder, and salt. Stir until just combined
  6. Stir in the toffee bits and cinnamon chips.
  7. Drop in tablespoons on a parchment lined baking sheet and bake for 8-12 minutes.
  8. Remove from the oven and cool for 2-3 minutes before transferring to a cooling rack. Enjoy!

  2. these cookies look sooooo good…and I have a bag of cinnamon chips..now to get the toffee chips tomorrow…I may only share half like you did…lol
