Mediterranean Dip

I bought my little sweet cheeks a learning tower today! I’m so excited! Hes SUCH an inquisitive little boy! When I’m cooking dinner he gets so mad until I pick him up so he can see whats going on..well you know how hard it can be to cook one handed..Ive been wanting one of these forever, but now hes finally old enough for it! I can’t wait for my little sous chef to be helping me out! 😀

Speaking of my little man..he turns one in two months, so I’ve started thinking about his birthday party…(lets be real, I started thinking about it the day he was born)…and I just have one question…HOW DID ANYONE PLAN PARTIES BEFORE PINTEREST?! There are so many amazing ideas I can’t even stand it! People are SO creative! Thank GOD for them, because I don’t have that type of creativity and I am going to need alll the help I can get!

So this Mediterranean Dip..oh meh goodness! Completely took me by surprise! It’s sooo tasty! I was thoroughly impressed! I will definitely make this again! What a great and easy dip for a party or to throw together for last minute company! I used these awesome new chips from Trader Joe’s, Quinoa and Black Bean infused Tortilla Chips, they were awesome! I definitely recommend you try them next time you’re there! Really though, you could pair this dip up with any tortilla chip! Its Superb!! Make this!

Yield: Serves 2-4

Mediterranean Dip

Ingredients

    For the Cilantro Pesto
  • 1 1/2-2 cups fresh cilantro
  • 4 cloves garlic, crushed
  • 3 Tablespoons ground almonds (pine nuts or pecans work too!)
  • 1/2 cup asiago cheese (freshly shredded)
  • 3-4 Tablespoons olive oil (until it turns to a paste)
  • salt to taste
  • Toppings
  • 1 cup white bean hummus
  • 2/3 cup chopped grape tomatoes
  • 1/2 cup chopped green onions
  • 2-3 Tablespoons tomato basil feta
  • kalamata olives (optional)
  • cucumber (optional)
  • red onion (optional)
  • Pita or Tortilla Chips to Dip

Directions

  1. For the pesto, combine all ingredients except the olive oil in a food processor, blend until purreed.
  2. Pour olive oil in while pulsing until a paste forms.
  3. On a platter, spread out the cilantro pesto for the bottom layer.
  4. Next top it and spread the white bean (or hummus of your choice.)
  5. Now start sprinkling on your toppings!
  6. Dip with a chip and enjoy! 🙂
