A quick and easy, cheesy chicken pasta with a greek yogurt sauce, drizzle of olive oil and fresh basil!
Awhile back, before my husband and I could agree on shows to watch together, we used to divulge in marathons of House Hunters and Chopped. Now we have a few more dramas that we enjoy watching together, though he still makes fun of most of my shows. oh well.
House Hunters was fun, because I’m nosy and love to see the inside of other peoples homes, plus it was fun to guess which home they picked for themselves. Chopped was intense but so cool to watch..seeing what they could do on a limited time with the strangest combination of ingredients. Some people were just born chefs.
When I was approached to do chopped at home, I couldn’t resist! We were given four different ingredients that we had to incorporate into a dish, thank goodness it wasn’t like the show, and they didn’t include something whack like goose liver or candy hearts. Totally normal and tasty things that I keep stocked at all times anyways!
ooh! and something fun for you! You can get in on this. Sargento is hosting a chopped at home contest where you have the opportunity to win $10,000! Pretty amazing, huh? Check it out here! And tell me what you entered! (like I said, I’m nosy!)
I made a quick and easy, 30 minute, weeknight pasta, full of chicken, red peppers, fresh spinach, greek yogurt, and of course a 6 blend cheese, which my two year old was eating by the fistfuls. The kid is obsessed with cheese, and its goooood.
The dish comes together quick, and once plated is drizzled with a tad of good quality olive oil and a sprinkling of fresh basil. It closely resembles a tuscan pasta, and its delicious!
